ドタキャン率の見積もり具合によりますが、
例えば「参加予定人数80人だけど、ドタキャン結構でそう…」という場合を想定します。
この場合、店には「あのーだいたい席を50～70ぐらいでとってもらって、料理は50人分確定で、飲み放題はきた人数分で。人数沢山きたら料理はアラカルトで追加します」
で予約します。
こういう予約が無理な店はパスしましょう。
